EGGLESS PANCAKE


As usaual every evening i have to think what snack i am supposed to prepare which can be liked both by raghu and pradhan so i decided to prepare pancake but i didnt have egg te main ingredient for the pancake so i decided to do eggless one .
To my surprise pancake came out to be very smooth and fluffy and it was relished both guys..

here is the recipe,

INGREDIENTS:

1 CUP ALL PURPOSE FLOUR [MAIDA]
2 TBSP SUGAR
1/2 TSP SALT
1 1/2 BAKING POWDER
2 DROPS VANILLA ESSENCE
1 CUP MILK
3 TBSP OIL

METHOD:
MIX ALL THE INGREDIENTS TOGETHER AND ENOUGH WATER TO MAKE A SMOOTH BATTER,LEAVE IT ASIDE FOR 20 - 30 MIN.

TAKE A 6"-7"DIAMETER FRYING PAN PUT SOME OIL AND WHEN THE OIL IS HEATED POUR THE BATTER INTO THE PAN,LOWER THE FLAME AND COVER THE PAN FOR 10 SECONDS AND THEN UNCOVER THE PAN AND FLIP THE PANCAKE TILL IT TURNS GOLDEN BROWN.

WHEN THE PANCAKE'S EDGES START COMING UP THAT MEANS IT IS DONE,SERVE THE PANCAKE
HOT WIT MAPLE SYRUP OR HONEY..

LITTLE LEARNER

Its so surprising to see my son growing up and see him learn new words daily.It is so amazing that he is grasping so many words daily and the first word he wanted to change was amma to mommy and he calls me now MOMMY .these kids have thier own mind we dont know what is going on i am looking forward to see how he will change when he is a teenager,just crossing my finger..:)
I can feel now my little baby is now a toddler running around exploring new things,immitating us all around the day.He is becoming a BIG BOY.
we are very happy to see his language and cognitive development.
To help him more in this,I have enrolled him in a winter class where every week he has got some activities which is helping him a lot and he is over coming his Stranger anxiety so all is welll.........

GARLIC NAAN WITH GOBHI MANCHURIAN IN GRAVY


Long time my husband wanted me to prepare gobi manchurian in gravy so for that he wanted me to prepare something special so i thought why dont i cook garlic naan so i searched a lot and i got a easy recipe so tried it out and it camae out really fuffy and nice.so with not much talk here is the recipe

INGREDIENTS:

* 2 cups All purpose flour
* 1 pinch baking powder
* 1 tbs dry yeast
* 2 tbs plain yogurt
* 1 tbs sugar
* 1/2 cup warm water
* 1 tbs oil ( veg or olive)
* salt to taste
* 3 cloves chopped garlic
* butter to baste

METHOD

# * note that you can add more flour to make it the right consistency.. that wont ruin the naan as long as you give it the required 3-4 hours to rise.
# In a mixing bowl add flour, baking powder, salt and sugar
# Mix well
# Add your oil and yogurt and mix well
# Dissolve the yeast in warm water and let it sit for 2 mins
# Mix the yeast water into your flour and kead well ( Make it a bread dough like consistency and just a little bit sticky. but not too dry, add more water if needed)
# Let it sit for 3-4 hours ( i leave it for about 4 hours)
# Knead your dough again for a min or two
# Divide your dough into 6 parts
# Make the parts into ball shapes and coat it with flour ( makes it easier to roll)
# Sprinkle some chopped garlic on to the ball ( you can use, cumin, cilantro, poppy seeds, mustard seeds, almonds, pistachios etc..)
# Using a rolling pin, roll your balls into a chapati shape ( dont roll it too thin)
# now sprinkle little water on top side of the chapati and place it on the thava and cook.
#change the side and cook next too so that both sides are cooked well and apply some butter on both sides
# Preserve in foil to keep it warm
# Repeat the process until you have baked all of your naan's
# Serve with chutney, dry curries or veggies... eat plain if you like.

MAJJIGE PALADYA


ITS LONG TIME SINCE I WROTE IN MY BLOG ABOUT THE NEW DISHES I PREPARED,RECENTLY WE HAD ONE TO MINNEAPOLIS TO OUR FRIENDS PLACE WHERE MY FRIEND HAD PREPARED MAJJIGE PALADYA ,I THOUGHT IT IS THE SAME DISH WHICH I PREPARE AT HOME AS HULI,THIS RECIPE IS SLIGHT DIFFERENT THAN MINE,BUT MY SON AND RAGHU RELISHED IT ,SO AFTER I CAME BACK FROM THERE I PREPARED AND STARTED WRITING MY BLOG AGAIN WITH THIS DISH AND ITS THE FRESH START OF THIS NEW YEAR..

Ingredients-

1. Ash Gourd OR Okra OR Snake Gourd OR chopped spinach OR Cucumber- 2 Cups
2. Channa Dal- 1/4 Cup( soaked in water for an about an hour)
3. Fresh grated coconut- 2 Tbsp
4. Cumin seeds( Jeera)- 1 Tsp
5. Green Chilies- 4, approximately
6. Yogurt( will be good if its a bit sour)- 1 cup
7. Fresh coriander- 2 to 3 sprigs
8. Fresh Ginger- an inch piece, chopped
9. Curry leaves- 1 Sprig
10. Asafetida- a pinch
11. Oil- 3 Tsp, for tempering
12. Mustard seeds- 1 Tsp
13. Salt- To taste
14. Turmeric powder- a pinch

Method-

If using okra, wash well, and dry each with a dry towel before cutting into small pieces. Fry the pieces well in a Tbsp of oil, till all the gummy extracts cease completely. If using spinach, wash well and chop. The other vegetables can be cut into large pieces, because, they tend to dissove while cooking.

Make a tempering of mustard seeds, curry leaves and asafetida in a thick bottom pan. Add the cut vegetables, water, salt and a pinch of turmeric and cook till they are done. It is a good idea to cook the veggies in water just enough to cover them. The water in which the vegetables have cooked contain nutrients, and it will be a waste to have to drain off the excess.

In the meanwhile, grind together the channa dal, jeera, chilies, yogurt, coriander, ginger and the coconut. Add the paste to the cooked vegetables. Channa Dal thickens while it is heated, so add water as needed to prevent the paLadya from getting too thick. Add the salt. Simmer for a minute or two, before serving hot with rice.

HAPPY NEW YEAR 2010

I JUST CANT BELIEVE ANOTHER YEAR HAS JUST PASSED BY .LAST YEAR WE WHERE IN INDIA ENJOYING WITH OUR LOVED ONES AND THIS YEAR IN NAVY PIER IN THIS BITTER COLD.
ON NEW YEARS EVE IN THE MORNING ME AND MY DH DECIDED TO GO TO NAVY PIER AND CELEBRATE SO WE PACKED OURSELVES AND WENT BY TRAIN TO DOWNTOWN CHICAGO AS IT WOULD HAVE BEEN TOO CROWDED IF WE WOULD HAVE GONE IN THE CAR.WHEN WE REACHED DOWNTOWN AND STARTED HEADING TOWARDS NAVY PIER PRADHAN WAS EXCITED ALREADY AND ONCE WE REACHED THE ONGOING WINTER FEST IN NAVY PIER THAT WAS IT.IT WAS VERY DIFFICULT TO HANDLE HIM AS HE WAS ENJOYING IN THE FEST.
AT 8:15 PM WE WENT OUT TO WATCH FIRE WORKS AND TO OUR SURPRISE PRADHAN WATCHED THE COMPLETE FIREWORKS IN THE COLD ,AFTER THAT WE AND AMOL'S FAMILY WHO ACCOMPANIED US FOR THE FEST WENT OUT TO INDIA HOUSE RESTUARANT TO HAVE OUR NEW YEAR DINNER AND IT WAS AMAZING THERE AS WE RELISHED THE FOOD AND RAN TO CATCH OUR TRAIN BACK HOME BUT WE MISSED IT AND SOE HOW CELEBRATED OUR NEW YEAR IN TRAIN STATION IT WAS UNIQUE EXPERIENCE THOUGH..
